Recipe

This is a family favorite in our house:



Mexican Lasagna
425 ° 40-45 min.
What you need :
lasagna pan
1 lb. hamburger brown and drain
1 packet taco seasoning
1 can refried beans
1 pkg. burrito tortillas
1 lb. cottage cheese
1 lb. Monterrey cheddar shredded cheese
1 pkg. lipton taco rice prepared by directions on box
1 cup crushed tortilla chips
½ cup salsa
Prepare taco meat per package of seasoning. Prepare rice per direction on package. Mix ½ cup of salsa in meat if desired.
In large baking pan add crushed chips on bottom. Lay 2 tortillas at bottom of pan . Spread ½ can refried beans on tortillas ½ lb cottage cheese spread on top of beans on tortillas top with shredded cheese. Lay 2 tortillas ½ beef mixture ½ rice shredded cheese layer w/ tortillas & remaining beans ,cottage cheese & cheese layer tortillas and remaining meat and rice. Top with tortillas add cheese to the top. Cover with aluminum foil .
Bake for 40-45 minutes. Serves 4-6 people.

It is up to you if you want more meat go ahead and add it. You may have extra ingrediants if you choose not to use as much. We have also made it without the beans but it is just not the same. Enjoy.
